Which would you pick? Also do you need reservations to GW Fins?
 
I'd pick August, but you can't miss with any of them, and, yes, get reservations at Fins.
 
August - truly gourmet, cutting edge dishes. Would be considered high end in any metropolitan area. Smaller courses and more of them. Set up for tasting menus and wine pairings.

Emeril's - slightly influenced by national exposure (not quite touristy, but hip). More heavy handed and robust flavors, but still very good. More set up for the app/entree/dessert format. Extensive wine list.

Brigtsen's - menu that changes every day and focuses more on local and fresh ingredients. Fish is the speciality, but lots of preparations such as veal, rabbit and sweetbreads. Known for their non-traditional seafood platter that has oysters, lobster, crab, etc - none of it fried. Lots of sauces (I was there last Saturday - I had the veal). Intimate - set in a riverbend house. Slightly more casual and friendly service - more of a "NOLA experience". Also much further from the FQ.

They're all great.

I have never heard of brigsten's, but I like the way you describe it. about how much for an entree?
 
Brigtsen's. And it's not even close.

I disagree. I think they all offer something a little different.

If the question was "you can only have one more New Orleans meal out of these 3 restaurants", then, yes, I would take Brigtsen's too.

But the question was "which would you pick?" I would pick August, because I was just at Brigtsen's this weekend, and while I love it, sometimes I don't like my food sauced as much as they tend to. I like some of the more exotic preparations that August offers, and I haven't been there for a while.

My point is really that these 3 restaurants are different and all bring something to the table (sorry). Depending on your goals, who you are bringing, taste, location, any of these would be good choices. For a visitor looking for a "New Orleans experience", I would agree that Brigtsen's is the obvious choice.
 
August it is.... Should I order the 5 course tasting and does anyone have any idea how much it costs? Or should I order individual items and if so how many as I have no clue what I'm doing at a high class establishment such as this one.
 
I am watching this thread because I too am debating where to make reservations when my sisiter comes in during the Thanksgiving holidays. I am thinking August because I have not been there, but I LOVED Cochon and I think she would enjoy that. Any advice will be appreciated.

That's up to you. Usually if you go with the tasting menu, everyone at the table has to order it (for timing and coursing issues). Usually it will be in the neighborhood of 60-75pp without wine pairings, and 100ish with. You will really see what the restaurant can do with the tasting menu, but if you're not used to eating in that style (many smaller courses spaced apart), you might not get the most out of it. Personally, I love eating that way.

While a little intimidating, everything on the menu is going to be good. If there's something you don't understand (and there will be), ask. There's nothing wrong with sticking with what you like - if you like fish or steak, you'll probably get a preparation that you've never had before. If you're feeling more adventurous - don't be afraid to try something new. You can do the regular app/entree courses, order all apps - get what sounds good.

Service there is great. If you feel you need some guidance with what to order, or how to course it, or what you like or don't like, they will be very accommodating.

You might consider Herbsaint, it's Donald Link's flagship restaurant. More creole french and a little more upscale than Cochon, but it's been hitting lately, and it's a lot of fun. Great place.
