In Goodfellas , Paulie used this method for their nightly meals: “He was in a year for contempt and he had this wonderful system for doing the garlic. He used a razor and he used to slice it so thin that it would liquefy in the pan with just a little oil. It was a very good system.”


... I’m not much of a cook myself, but i do come from an Italian-American family, and i dont recall this method being used.. Anyone ever try it?

Whenever I've done it, I sauteed it, not trying to liquify lol. I will try next time I'm standing over a stove (which is pretty often it's my safe space). To be honest, though, if you want ya gahlic invisible, gahlic powder ;D

Low and slow might work if you slice it microscopically.. Hmm..
 
Didn't Gus Fring also use such a technique in Breaking Bad (perhaps as an homage to Good Fellas)? Been a while since I watched the series, but I seem to remember Walt pulling up outside Gus' home, planning to knock on the door, but then Walt's phone rings and Gus simply says "Go Home Walt."

Walt gets back in his car and drives away, then the shot switches to Gus in his kitchen, meticulously slicing garlic. I thought it was with a razor blade, but it could have been a knife.

+1 for using "such a technique".. Automatically read it in Gus Fring's voice
 
I remember reading an interview with Scorsese and he said something to the effect of "It's not practical in real life and whoever does it is stupid"

So I'm an idiot for trying this after I watched Goodfellas the first time.

And I prefer to throw whole cloves of garlic in most things I cook. I love it and it gives my wife and kids the opportunity to spoon them out of their bowls into mine.

It is a lot of work

My wife gets irritated at crawfish boils because I love to eat the garlic cloves and she cant stand the smell
