Sophia Vergara's character is really well written. Usually in sitcoms, the woman is the "straight man' foil as a set up to the man's antics. (See Raymond and every copycat sitcom of that ilk). But Vergara is genuinely hilarious, and a lot of the cultural mistakes and flubs they have her make are completely true to real life. Every time she talks, it's like I'm watching my Peruvian ex girlfriend.
