I pretty much agree with this, and their quality control on the oyster grilling is somewhat erratic. There are other places (not necessarily in Jackson, of course) that do them better.

They do usually get great oysters, though.

I agree, I have run into that from time to time. But when they are on, they are spot on.

And never ever ever make the mistake of standing in line at some festival stand for them. that is when their quality control drops through the floor.

You can add me to the list on the hit or miss nature of their preparation of the oysters.

On the other hand, I had some wood fired oysters with chili garlic butter at Cochon the other day and boy, let me tell you, best thing I've eaten in I don't know how long.
