Maybe YOU should learn the difference between "Cajun & Creole"! NOTHING in the north! (sorry for any transplants).
Creole= Descended from 1st generation(from Europe) born in the "New World", city, saltwater fish, andouille, shrimp, Spanish/German/African/Italian influence, established by employees(domestic/restaurant), SE LA
Cajun= Descended from the <200 families expelled from Canda, country, fresh/brackish water fish, boudin, crawfish, French/Native American influence, homecooking, SW LA.
There has been HUGE crossover, but in it's "pure" form there is a big difference, historically, culturally & culinarily.
