As for me I got a few.

2006: Saints 42 Cowboys 17
2009: Patriots 17 Saints 38
2018: Saints 51 Bengals 14
2017: Saints 47 Bills 10

I watched the Bengals beat down last night on Game Pass.
 
Yea it's gotta be that colts 60 burger. We tried to back off too but then, I think it was Leigh Torrence, brought an int back for 6 at the end to make it 62.

That game against philly where Jenkins flipped SP the bird was pretty nice too.
 
2011: 62-7 obliteration of the Colts.
That Colts game was brutal. I almost wished that there was a mercy rule for it. Lol. It was one of the few times I saw Coach Payton have his foot on an opponent's neck and not let up.
 
The 48-7 win over the Eagles in 2018 has still felt to me like the most dominant win I’ve seen. The Saints had the Rams game and then humiliated Cincy so they were riding high. Eagles were a ridiculously talented roster and slumping so I figured it would be a war between great teams.
 
That Colts game is certainly the most dominant. We've been able to embarrass teams with miss-matches through the air.

One game that stood out to me the most and OP mentioned it was that Bills game a few years back. We have never, under Payton, run the ball more dominantly than we did that game. We straight up man-handled them and for a team thats always had the stigma of finesse and soft, it was such a great feeling to see us put the beat down on the Bills. What is even more impressive is that the Bills were 5-3 and 4-0 at home coming into that game. We didn't just beat a bottom dweller, we stomped a playoff team built on solid defense and run game, on the road.

That was the first game that came to mind when I read the question. It felt so dominant because we've almost never beat a team in that fashion. The 15 or so play drive that was all runs is something you see from the Bears, not the Saints. Beautiful.

Its def the 2011 Colts beatdown (I think it was 2011)

It was the year that Manning was out due to his neck surgery.

Curtis Painter took the field for the Colts and showed the world that his time was limited in the NFL
