Usually changes in adaptations like this are not to make things "better" per se. More like having to make changes in order to fit a TV season format that by definition has limited time available. I think they are doing as well as could be expected. The time and energy put into the sets and landscape, etc., clearly show that they are invested in making a good show.

Some of us are still smoldering from the epic flameout perpetrated by another fantasy show that was gorgeous but written by morons.
We're hoping not to see that tragedy repeated.

It's like, you pick an IP like The Wheel of Time because it's popular. It has a built-in fanbase you can count on for word-of-mouth advertising. It's popular because it's a helluva good story. (Notwithstanding the terminal case of plot-wandering the original author suffered in the telling of it)
We accept that you have to make some changes in order to bring a printed story to a visual medium. That's fine if you're telling the story differently, but don't tell a different story.
If you do that, you'll get turned on with a savage quickness because that built-in audience you counted on now feels tricked and betrayed.
