Um, it's not really supposed to, but that doesn't mean someone didn't take a little creative license and make it like a hollandaise. It's meant to be similar to a creamy potato soup from a consistency perspective.
I love adding lots and lots of hot sauce, whatever is around, to my creamy soups to where they're orange rather than white. It gives them a great flavor without adding too much heat because of the dairy in the soup.
