So yea, it being a “cheese product” is kinda the point.

I listened to a podcast on philly cheesesteaks not too long ago, and apparently the better places (read not the tourist spots) have options. I.e. you can get whiz or "regular" cheese (or not), peppers, mushrooms, whatever. So, yes, whiz is common and pretty much always an option, but you can have an "authentic" cheesesteak without it.

Have to say, I'm inclined to try it.
