I think it’s a bit more than that
1. Has to taste good
2. Had to taste like what it’s supposed to taste like. If the lab grown beef is good but doesn’t taste like beef that’s a hard sell
3. Cost. It can’t be much more than regular meat. If it tastes good, tastes like beef but is ten times the cost of the same amount of beef that’s a no go
4. Be prepared for backlash. If this starts to take off in any real way get ready for the inevitable propaganda. Outlawing hamburgers, against the American beef industry, putting the hard working ranchers and farmers who fed American families for generations out of work
