What is the definition of “Creole?”

If you're from Louisiana and you make a seafood dish and people say ,"wait...is that tomato?", you might be Creole.

If you're from Louisiana and you make a seafood dish, and people say, "wait...is that pork?", you might be Cajun.
I think both of these are Creole traits in Louisiana. Cajuns don’t mix seafood and meat and they don’t add tomatoes unless it’s a sauce picante or coubillion.
