How much of that do you think has to do with how the NFL values Tackles vs. Centers and Guards? What I mean is that teams will often take Tackles in the 1st round but seldom take Guard or Center in the first round. That means that on average since all teams have two starting Tackles and 3 starting Guards/Centers, most teams will have drafted those two Tackles in the first and then gotten the Guards and Centers in later rounds or in free agency.

So, it seems to me that what we have here is correlation, not causation. Teams don't only have two first round OL because you don't need good OL, it's just that there are only two OL positions that you generally have to draft in the first round to have a really good OL.
