H2 gas doesn't really dissolve in water, while H+ ions do dissolve and make it acidic. If these bottles are using electrolysis to generate H2 gas from the water, then it would also be making O2 gas as well and the amount of water should decrease as a result. This mix of H2 and O2 gases would be potentially explosive over time.

Smells like a scam to me.
