Injury reports are very unreliable. We have seen time and time again players who never show up on reports then suddenly get hurt and you hear from them or the team that player X had been dealing with injury Y for a number of weeks but yet they were never on the report. If your practicing hurt you may well never show on the report. Teams also aren’t 100% truthful on injuries, they should be but don’t for a multitude of reasons.

Your argument isn’t wrong when you have a large variance in age obviously a younger line is going to be a tad bit quicker and more physical, but in this instance that large age variance in just isn’t present:

Eagles DL average age = 24
Rams DL average age = 24.3
Saints OL average age = 24.6

McCoy is the elder statesman of the Saints offensive line having just turned 27 on August 27th.

If you’re strictly going off the entire roster age the saints have the 16th oldest roster in the NFL where as the Rams have the 31st oldest roster and the Eagles have the 27th oldest roster. The Saints are indeed older overall but our offensive line is not made up of aging veteran players.
