You'd be surprised. I worked for an attorney who specialized in dealing with insurance cases, mostly dealing with property damage/loss. Cases involving insurance and insurance fraud happens all the time. Most cases get settled, but more than a few do end up in the courts.

That said, insurance companies do indeed usually have more resources and the system favors them in most cases.
I don’t doubt it. However, for every person who could afford an attorney, there is one who couldn’t and I am being very generous with this statistic.
If everyone is able to sue when they face injustice from corporations, we wouldn’t need government groups like the EPA, the BCP, etc..
Closer to home, there is an area dubs Cancer Alley. I don’t think suing is Ann option for the people who live in these parishes.
