Also, does the photo op listed on the website mean taking a picture with them at a separate time rather than taking a selfie with your phone at their table?

Make sure you compare the price on the individual's page to that on Epic's page. They can differ (Epic includes fees as well).

If you plan on standing in line at the table, make sure you go early as they will definitely send you away if they reach the cap for that period of time.
