Those dates sound great. So good, in fact, that I think I'm going to have to bust out my frozen gallon of duck fat and prepare something like it tonight. I like to do potato strings in duck fat and almost nothing is better than that, but those dates sounds really good. I'll probably use proscuitto instead or something else, but thanks for the yummy idea.

I couldn't find dates so I did some other things instead none of which were memorable enough to cut through the booze filled haze that replaced the evening's details.

I did, however, do a duck confit I started that night and brined up some duck as bacon. that was good.

I was still thinking I'd find dates at the farmer's market the following day or two and that I could use it to wrap them.

And, it is awesome.

Use it to wrap scallops in and then sear off the scallops in duck fat!
