LAFAYETTE — Four links of hot boudin sat on a Styrofoam tray while Bob Carriker maneuvered for good light to snap a picture.
“The compromise is the taste if you wait too long,” cautioned Nolan Theriot, who stood nearby in the parking lot of Don’s Country Mart in Carencro, hungrily eyeing the steaming package on Carriker’s tailgate.
