When you add the shrimp into the gumbo, do you turn off the heat immeadately and let them sit, or do you cook them for a while? I know all of the "experts" say turn the heat off immeadately after adding, but I want to know from the real experts.
If you do let them cook for a while, when would you add in the fresh oysters?
