Ever since Hubig's burned in a lard-fueled fire four years ago, New Orleanians have been longing for sweet hand pies. Next week, Haydel's Bakery hopes to satisfy that hunger with the release of its new treat.

Apple and lemon pies will go on sell next Friday (Sept. 9) at Haydel's Bakery on Jefferson Highway and all Fleurty Girl locations. Chocolate and cherry pies will follow.

"Once we get the process fine-tuned, they'll be distributed through the city," Dave Haydel said.

The Haydel's pie is baked, not fried. And it uses the same dough as Haydel's full-sized pies, which are sold for Thanksgiving and Christmas.

"Lard fueled fire"

How often can one use those words in a sentence?
 
People have offered to buy them and rebuild, but the family wants a crazy amount of money (heard this from two sources in the banking community). My take is, they can't afford the capital expenses, and for that they won't reopen.

Nothing last forever. 4 more years and that recipe won't be worth the paper it's printed on. Another bakery will fill the gap and Hubig's will be the latest chapter in "ain't dere no mo".
