OMG - My recipe... [a version of shrimp and butter beans] (1 Viewer)

I will copy this to the recipe thread...

1 lb shrimp "Med"
1/3 stick butter
1 small red onion - finely chopped
some crushed garlic
1 can large butter beans - drained
1 can Del Montie Diced tomatos - With Garlic, orageno, and basil - drained
sprig of thyme
S&P to taste
top with Shredded romano Cheese...


This was incredibale...

Saute the red onion and garlic in butter.... add shrimp and cook for just a minute to give the shrimp a taste of the butter, onion and garlic...

Add the Butter beans and tomatos.. add thyme... s&p to taste...

Let it simmer until most of the water cooks out, and then plate and top with a handful of romano cheese....

This was like the friggin BOMB....

Please try it and get back to me... I made it up, but it was friggin incredible...

I'm stuffed after foraging and having baked fish, with collards and sauteed snow peas from the garden, but that sound so good.... I'd eat till I popped.
 
I gotta put a "TM" on this before Emeril picks it up.. ;)

That does sound rather gnarly. Butter beans are one of my favorite beans already. You didn't do it with rice or anything?
