Assuming our real desired players are gone before we pick, and someone wants to jump ahead of Buffalo (who will likely want a WR) are there any stud WR's that might warrant this scenario panning out, and in what situations, if any, would we trade down?

Jerome Simpson in the 3rd. His hands are HUUUGE. Biggest out of all the prospects, every position.

I don't see any WR's worth trading up to get, but you may have someone interested in trading up for either an O lineman or defensive end
