Sausage for Jambalaya ? (1 Viewer)

I bought Manda one time because it was on sale and ended up throwing most of it away. It was borderline inedible. I don't know how you can possibly fork up sausage, but they pulled it off. Maybe I just got a bad batch, but buyer beware.

I get my andouille from La Bon Boucon a local smokehouse in Back Vacherie. Old family recipe that is terrific. I put it in all kinds of dishes. He also makes a madlain which is a huge andouille prepared like a small ham. It used to only be available around the holidays, but the owner has them year round now. If any of you are ever in the area, he has a lot of unique and tasty products.
