I'm thinking Payton learned his lesson with Canfield. A righty and a lefty play differently. That means practicing differently, scheming...the list goes on.

Although I wouldn't put it past Payton to having a lefty just to practice against and learn some of the nuances attributed to left handed play.

Brings up a good question...how many lefties do we go up against?

sadly canfield is a career #3 QB. he just doesn't have the skills to be the immediate backup plan for any team in the league.
