How do we know that the "you" that goes into the computer isn't just some sort of copy and paste, and the "you" that you really are actually just dies.

To the external observer? No. They will think that you just passed into another form basically. But to you, I mean... you would die and be gone, the new one would just be a copy with all the memories from you and it would think it WAS you

Since you would be dead and the consciousness that was uploaded to the computer would be little more than a copy of the data in your brain, I'd imagine it would matter.

What will that moment be like... When your consciousness passes from your physical body to a different medium. Do you "die"? And if so... How do we know that the "you" that goes into the computer isn't just some sort of copy and paste, and the "you" that you really are actually just dies.
