what should I eat? For the BSC Championship Game, I did the whole little pizza rolls, french onion dip with frito(e)s, chickwn wings thing. Today for the parades, we did the 7 layer Mexican dip, crab dip and I made a muff. what are y'all doing? I thought about doing ribs, but I don't think I want to be eating ribs in teh living room, where the TV is.

I don't know what else we're having, but for the game, my wife is making a pizza dip that is terrific.

That's a sandwich that has pretty innocuous meat but with a hidden layer of jalapenos or something else hot in it.
It's stealthy!
 
I decided on fajitas. I'll have all the stuff ready and people can make one when they want it. Besides that, lots of beer. Light beer of course, I'm on a diet. :D

BEAVER WITH SOUR CREAM RECIPE

2 - 4 lbs. cut beaver
1/2 cup flour
1 tsp. salt
1/4 tsp. paprika
1/2 tsp. salt
1/2 cup water
1 cup sour cream
Oil to cover
1 onion

Clean beaver and soak overnight in salted water (1 tbsp. salt to 1 quart water). Drain, cut up, and roll in 1/2 cup flour seasoned with 1 tsp. salt and 1/4 tsp. paprika. Fry in fat until browned. Then cover the beaver with sliced onion. Sprinkle the onion slices with 1/2 tsp. salt. Add 1/2 cup water. Cover the skillet tightly. Simmer for 1 hour. Add 1 cup sour cream the last 15 minutes of cooking time. Serves 2 - 4 depending on the size of the animal.

Red Clam Sauce

2 cans (7 ounces each), drained, liquid reserved
1/2 cup olive oil
1 small onion, sliced
1 small clove garlic, minced
1/2 cup dry white wine
3 cups tomatoes,peeled,chopped, and seeded
1 or more fresh green chile peppers, seeded and chopped
1/4 cup chopped parsley
salt and pepper, to taste
PREPARATION:
Heat oil in a skillet and cook onion until lightly browned. Add minced garlic, wine, tomatoes, reserved clam liquor and chiles. Cook over high heat for 20 minutes. Add minced clams and the parsley.
