Yeah I hear ya, and I do not have the comprehensive knowledge that you do about this stuff...but seems like they could explore a bunch more about him relating to the fall of the Jedi, his own brash behavior led to a lot of what happened? Plus the fact that he killed Jengo Fett might set him up as a decent antagonist in Book of Boba? I know they might be treading too deeply into the recycling character stuff though too?
Fully agree on Hondo, that would be really cool and open up a lot of fun pathways.
so 2 seasons in the Mando pattern seems to be brand new characters in the center
then characters who were in the margins of the canon movies as 'guest star' types
then Clone Wars/Rebels characters as 'special guest stars' (also mining Clone Wars/Rebels for much easter eggs)
and then we've only had Luke as only major Canon character do his Jedi ex Machina thing

and being situated where they are between OT & ST, not sure how/why that would be different in s3
seemingly Han & Leia could make an appearance, but that creates even more technical challenges than Luke (but Han would make a LOT of sense in the Boba story)
i don't think we've seen 1 wookie in Mando, so if there was a Canon character to pop in, Chewie would be my guess

if the FFs wanted to keep the redemption thing going - 'Corporal' Phasma would be obvious
I think Hux's dad is alive at this point, so that would make some sense

Favreau also confirmed that Book of Boba Fett is NOT Mandalorian season 3. There had been some confusion on that. It's a separate show. They'll do Book of Boba Fett first then go into Mando season 3. But that also means we're probably not getting Mando season 3 till early 2022.

Season 3 was confirmed for Christmas next year so we're getting two Star Wars shows in the same month.
 
Favreau said Boba is shooting now and Mando will start when Boba wraps
So almost certainly Boba next Xmas and Mando a year after

I suspect we will see Din in The book of Boba Fett and that will lead into Season 3 of The Mandalorian.
 
A third article that I've seen said it was Christmas but since it's on a Saturday then season 3 would premiere on Christmas Eve with Boba's show being early December.

Kennedy never actually confirmed season 3 for Christmas at the presentstion. She just said "the next chapter" and people interpreted that as season 3. But in retrospect it was very specificly not saying something to keep the Boba Fett reveal secret.

Having two star wars shows running concurrently makes little business sense if your goal is to keep subscriptions year round. You do Book of Boba Fett in December/January then move into Mando season 3 in the spring to keep the subs rolling.

Which I'm ok with. One series at a time is enough for me. Plenty enough other options to keep me busy during some of the down time.
