Notre Dame said it discovered the mistake in May and requested repayment, but Gaspar refused.

The "tip" was given on April 17th. That's really not too long to request the money back the following month. As a Catholic, there's a lot I don't like about Notre Dame. But with the given information, it sounds like the caterer tried to get away with one. At the least I wouldn't go around internet forums trying to demonize Catholics over the issue. indeed.

Why wouldn't you call to confirm before not only cashing the check but before spending it. I am not in that line of work, so I dont know what a tip is, but it seems like it was a bit high.

There's always two sides to a story. Sounds like she's hiding some stuff. And it's already bringing up her mental illness.
