What is the best wood to smoke with? (1 Viewer)

I have my best results with pecan, especially with light/white meats like chicken, pork, etc.

Experiment and figure out which taste you like best. I prefer a mesquite with beef and something milder like apple or cherry with chicken and pork. Make sure you use the appropriate dry rub on the meat though. This is as important as the wood you choose.
 
I'm partial to Pecan. I think it imparts the best flavor. But some peach, apricot, apple or cherry branches put in a nice sweet flavor as well. Oak is also killer. It's easiest to find mesquite and hickory at the store, and both do well.
