I saw people getting all worked up over this yesterday. I say "so what". Gumbo basically derives from throwing a bunch of stuff in a pot.

So what if it's not authentic. There are plenty of crappy gumbos out there. Kale and quinoa are not terrible things (and, actually, kale is not uncommon in a gumbo z'herbes around Easter).

Internet tears are a powerful thing. :jpshakehead:

Gumbo was actually derived form Okra. Usually leftovers put into a soup and thickened with Okra or rice.
Because it is a staple in our culture, we think it must ONLY belong to us. Disney probably shouldn't have tried to tie that recipe to Louisiana or maybe called it something else.

It has Kale in it , No you dont put Kale in anything except a trash can.

That's the likely origin, though it is interesting to note that the native Choctaw people called filé 'kombo'.

Disney may have gotten away with saying that this is what 'Gumbo' might have been if it was invented by the __________.

A local Food truck makes awesome sandwiches - one of which was the "Texas Reuben". It consisted of brisket, a Jalapeño coleslaw and other stuff. It tastes nothing like a Reuben - it was merely an exercise in imagining what a Reuben would have been like if it was invented in Texas. Given that context, it was a very good sandwich indeed.

Being from New Orleans/Mississippi, he also made his own version of a Muffaletta that was awesome.

I dunno, I could see kale going into a version of gumbo z'herbes. But no roux, and chili powder, thyme, and oregano?

Don't even get me started on subbing quinoa for rice.

And what's with the chopped bay leaf? You throw a couple of dried bay leaves in there, then take it out before you serve.
