I saw people getting all worked up over this yesterday. I say "so what". Gumbo basically derives from throwing a bunch of stuff in a pot.

So what if it's not authentic. There are plenty of crappy gumbos out there. Kale and quinoa are not terrible things (and, actually, kale is not uncommon in a gumbo z'herbes around Easter).

Gumbo was actually derived form Okra. Usually leftovers put into a soup and thickened with Okra or rice.
Because it is a staple in our culture, we think it must ONLY belong to us. Disney probably shouldn't have tried to tie that recipe to Louisiana or maybe called it something else.

It has Kale in it , No you dont put Kale in anything except a trash can.
 
I dunno, I could see kale going into a version of gumbo z'herbes. But no roux, and chili powder, thyme, and oregano?

Don't even get me started on subbing quinoa for rice.

And what's with the chopped bay leaf? You throw a couple of dried bay leaves in there, then take it out before you serve.

Pretty weird rationale to defend this on. Other things being crappy doesn't make things being crappy OK. Contrarian for contrarian's sake is pretty boring.
