i think it's a very interesting topic
but i also think it's important to discuss particulars than leave it to generalities that become just another version of 'kids these days...!!'
the Yiddish Indian says something like 'go in health - until we meet again' he checks what he said with 'they darker than us' - i always took that to mean, 'as bad as it is for us, it will be much worse for them' - the family is certainly not the target of the joke
fats has ALWAYS been a target for jokes - from early silent/vaudeville - Costello/Curly/Hardy up through Chris Farley and Mellisa Mccarthy are still punchlines
there's plenty of anxiety, add/adhd, 'on the spectrum, et al humor out there

for Blazing Saddles, i think the indian/yiddish scene (but for 'blackface' reasons) and Dom Deloises's "watch me f*ggots" scenes wouldn't be done, but that's about it

The fat jokes etc you mentioned were done by people known for that schitck. Were any of those people able to crossover like Brook's taking his idea and working with other people and bringing his sense of humor to the screen. He worked with Wilder, Pryor, Deloises (3 completely different backgrounds) and others because they understood each other so well. To me comedy is not just an art form. It is like art vs porn, you know it when you see it. There are plenty of comics/writers/producers that I don't get or even like but other's do. I also treat Brooks as the Gold Standard that other's need to strive to match.

"We don't want the Irish" is one of my most common quotes right after someone asks me what I want to do......

The target of all of those jokes you cite are bumpkin racists
That’s an evergreen target rich environment
The rule of thumb is ‘don’t punch down’
Subsection of that is be veryvery careful if you reach across cultures for your joke - I will cede it’s unsure footing, but I don’t think it’s a ‘bad’ rule of thumb
 
One of the scenes why this movie can not be made today. The scene was written by Richard Pryor btw.
The Sheriff was originally supposed to be played by Pryor but either the studio was scared of, or he couldn’t get insurance, due to his drug use

I read in an article years ago that it was a mutual decision by both Pryor and Brooks because Pryor's reputation would have made the character not believable. According to that article Pryor and Brooks hunted around and together decided on Cleavon Little.
 
See no evil, hear no evil was just too darn funny. I loved that movie as a kid.
 
There were 3 movies they did together but I only saw this one and Stir Crazy.
Stir Crazy was 2/3rds of the funniest movie i ever saw - i get that it's really hard for joke-y joke movies to land the ending (it's why i love how Holy Grail ends - just out of nowhere), but man the first part of that was hysterical
 
Let’s also not forget Me, Myself and Irene. Absolutely loved that movie. “Vagiclean? What’s the matter a little extra cheese on the taco?” ROFL

to this day, it still makes me laugh just thinking about it
 
Blazing Saddles was a masterpiece until the ending.

I'd say that Young Frankenstein is my favorite. If you watch the original Frankenstein and Bride of Frankenstein first, you'll appreciate how well done Young Frankenstein was
