Well it took a few days to find time but my wife cooked Salvadoran Chicharrones tonight

Chunks of baby back rib tips simmered on spices and then pan fried until browned and crispy on the outside

Onion soup for tonight with actual gruyere, smoked gouda and smoked provolone. Two other changes that I made are that I added some liquid smoke and instead of deglazing with white wine I used apple whiskey. I haven't tried it yet.
