What y’all eatin’ - Coronavirus edition (5 Viewers)

I really want to learn how to make this. The only version I've had of that is this. Not half bad, but the real deal would probably be so much better.

i'd be happy to tell you, but if i have to remove the baker's twine before eating, not sure if that great of a recipe. good to me though.
 
For those in Ontario. What is your preferred sausage for jambalaya and where do you get it?
