at the line could the defense start yelling over him so that the Colts players couldn't hear what he's trying to call? It would atleast force the Colts to use hand signals....?
 
Some try. A lot just ignore it though. Like 80% of what he yells out is just garbage, ie it doesn't mean anything, it's just there to hide the real calls and confuse the defense.

that's illegal...it is impeding the cadence of the offense...this is just like defensive players yelling "hut" to draw the offense offsides.
 
I've seen penalties thrown on defensive linemen for "trying to imitate the cadence," and I'm not sure whether or not it would apply to trying to mimic the QB's vocal audibles, but like LSSpam said, people know exactly what they're listening for, so even if you were yelling out a bunch of mumbo jumbo, the offensive players will recognize the key words they're looking for...unless the defensive players were to somehow know those key words, then it would be possible to cause mass confusion.
