As a Saints fan if Brock Purdy was our QB would you feel comfortable with them paying him $55 million per year for 5 years?
 
I would try to send him a 3 or 2 year extension first to see if he can grow he’s been surrounded by great talent and I would let him know that allot of QBs wish they had you’re supporting cast now we value you but to keep this cast you have to work with us now we not short changing you but for now this is the scenario now he takes that and we continue to have success we dropping that bag on him
 
The question needs to be 'Would you be happy to pay Brock $55m, when the only real alternative is Jimmy Garoppolo?' - that's the issue.

It's not how much he costs, it's how much you can do without him.

They are tearing their team apart anyway. I don't see the point of having a mid-level $55 million AAV QB on a team that has been torn apart. It will make it harder for them to have the money to rebuild and by the time they do rebuild he might not be the QB anyway.

Personally, if I were them I'd look for a young vet free agent or trade for a young vet like Malik Willis or Milton. Then build the team while having more money. But, yes, worst case scenario I'd sign Garoppolo, Flacco, or even Winston before giving Purdy that money for that long.
