I saw this story on Cold Pizza today but I didn't have enough time to get on-line, I then did a search for 'cheese' and didn't see it so I'm sorry if its already been posted.
And this is paraphrasing since its been awhile.
They were saying that Payton uses humor to keep the tension off the players. One of his favorite phrases is "Don't eat the Cheese", which he uses to try and not let players kid big heads.
For example, after Reggie scored 4 TDs in one game or Jammal Brown would have a good blocking day, he would tell them, "Don't eat the cheese."
