Based on a project I am working on, would you classify the original, sequels, and remakes in the sci-fi/fantasy category?

I would not. I would consider it a Family Friendly Rom-Comedy.
Are you saying a "Family Friendly Rom-Comedy" cannot also be sci-fi/fantasy?

In a truly literal sense, of course. When I think of Sci-Fi, I think of aliens and spaceships and other planets. When I think of fantasy, I think of elves and magic and dragons. When I think of Herbie, I think of a crazy car trying to hook two people up, hence the whole Love Bug thing.

I asked my AI tool and it replied:

“Herbie the Love Bug,” also known as “The Love Bug,” is primarily classified as a comedy, family, and sports adventure film. It follows the adventures of a sentient Volkswagen Beetle named Herbie and his driver, Jim Douglas. While it does have elements of fantasy due to the car’s sentience, it is not typically categorized as a sci-fi or fantasy movie.

LOL @ "sports adventure"

How is a sentient car not science fiction?
I asked my AI tool "Is the movie "Christine" science fiction?

It replied:

The movie Christine (1983), directed by John Carpenter and based on Stephen King’s novel, is primarily classified as a horror and thriller film. It tells the story of a nerdy teenager who buys a 1958 Plymouth Fury that seems to have a mind of its own and a deadly, possessive personality. While it has supernatural elements, it isn’t typically categorized as science fiction.
