ten (plus three indices) past eight, and twelve (plus four indices) seconds (eight:ten+three:twelve+4 or 08:10+3:12+4) = forty-eight past one, and fifty-nine seconds (01:48:59)

It's an anti-caking agent they put on the cheese. If they didn't it would clump and be ugly to the consumer.

I've seen some who wash it with a strainer. If I'm going to trouble, it'll be to grate it and have unaltered cheese.
