TFC - Texas Fried Chicken (15 Viewers)

Did shake and bake chicken for dinner here tonight 😂 Not as good but it'll stave off a craving for a little bit.
 
I have found a few churches chickens over the years. Always a good 2nd to Popeyes.
 
Popeyes is very hit and miss. The franchises are very inconsistent. You can either get a really good one or a guaranteed appointment with the toilet. Fortunately I’ve got two decent ones in my area. But the rest are absolute garbage.

Back on KFC (or PFC).. One of my favorite things in Japan is KFC. They are totally different over there. The menu is very different and the fried chicken is OUTFRIGGINSTANDING! Fun fact, a long time ago, KFC started a Christmas tradition in Japan. They got the Japanese to believe Americans always have a bucket of chicken for Christmas. Now, in Japan, you have to reserve a bucket of fried chicken at least a month or two in advance. They sell out all the time.

And let's be honest - the best fried chicken comes from either (a) a gas station lunch counter or (b) the country (and I mean country) grocery store. Like where the meat cooler has tripe and "picnic".

Those places are next level.

KFC sucks. Seriously, bottom of the barrel.

Popeye's is generally top notch (at least in NOLA). I'm ignoring all of you griping about the service. Especially if you are getting 2 or 3 piece. Minimum 8 piece (dark) or GTFO. Tenders can also GTFO.

Most all grocery store fried chicken in New Orleans is top notch, although generally not spicy (I think Zuppardo's has a nice spicy style, but it's not Popeye's spicy).

Cane's is not legit fried chicken (no bones) and is seriously terrible.

Brothers/Krispy Krunchy/Gas station chicken is usually very good but also gives me more immediate intestinal distress than the others so I tend to avoid it. No judgement if it works for you.

Church's is fine - as a kid I used to like pulling off the skin separately. I'd eat it.

when i lived in BR, my wife and Mother in law worked in Harahan, sometimes they would stop at KFC to pick up dinner every now and then. way too many times they would be told they were out of chicken for the day. this was at like 6pm, there hourd were until 10pm. i would assume they weren't out of chicken, they just didn't feel like cooking anymore.. smh..

I would imagine that chicken would be one of those things with fairly strict quality/health controls
like you defrost a certain amount of chx for the day and that's it
you're not going to refreeze it, you don't want it to sit overnight...

i mean, there is this thing called a refrigerator that is a median between frozen and cooked, and i heard you can actually keep chicken in the refrigerator a whole day...lol
KFC swears they always used fresh chicken (maybe thats changed in the last few years)...

I'm sure thaw/refrigeration is on a timetable - if you thaw tuesday they must be cooked by Friday (or some such)
it's Friday and all of tuesday's thaws are cooked and wednesday's thaws aren't ready yet (or some such)

Now this is my 2025 brain trying to recall 1985-86 memories when I worked there so that sets a certain bar of accuracy. We had a walk in cooler and it was a first in first out kinda deal. First in was frozen on the left side and it would work it's way to the right where it would be thawed ....or mostly thawed. Picture stacks of plastic totes full of bags of chicken. Pretty sure those would then go out to the kitchen by the bag and put in the fridge that was out by the prep table. It would be hard to run out of chicken altogether but I could see them getting to where they ran out of thawed chicken.
