And while we're at it, I'll throw in some original music bar bands that were incredible:

The Sheiks (aka, the Saint Louis Shieks)
The Producers
And, lest we forget, Potliquor!
 
Tommy Bolin. Nazareth. Husker Du. Mastodon.

Mars Volta. Early Genesis. King Crimson... man this could take a while and it's hard to quantify.
 
Also hailing from the metal genre, and Washington DC, a band that took inspiration from a Voivod song to found their name: Nothingface. One of the most underrated metal albums of all time (IMO) is An Audio Guide to Everyday Atrocity.

Other notables:

Acid Bath
Incubus (pre-Make Yourself album)
Hed(pe)
Seven Mary Three (1st two albums were legendary)

Just hold on a minute there buddy. Incubus only had 2 official albums pre Make Yourself, Fungus Amongus and S.C.I.E.N.C.E. Their last good album was A Crow Left of The Murder which is when Ben joined the band after Dirk left. The influence of Ben completely changed their approach to music, and they have been on a steady decline since then. Morning View was their most critically and commercially successful album, and was a very good album.

TL;DR Make Yourself, Morning View and ACLoTM were all good albums, just not the funky, thrash, mini Mr. Bungle type of music that was displayed on the first two albums.

I don't know much about the members, but I know all about Fungus Amongus and S.C.I.E.N.C.E. I saw Incubus at Ozzfest in '98 when they opened the festival. Well before the lead singer prettied himself up. Make Yourself was a very good album, just not as good as the first 2 imo...

Never heard Mr. Bungle (though have heard of them). Were they Faith No More-like also?

No, not like Faith No More at all, but well worth checking out. Their album California is awesome.

As far as Incubus goes, the songwriting became apparently more important, and the composition of the songs became less congested and more to the point. Although it became more listener friendly, their next 3 albums were terrific. anything after that is just poo poo. Such a drastic drop off.
 
The Celibate Rifles, Australian mid 80's - Early 90's rock/alt band. Great guitar work, excellent covers of Dancing Barefoot, Baby Please Don't Go, and 2000 Light Years From Home.

Good selections!

I saw the Producers at a free concert in the 80s at USM and they sounded great! The performance had a lot of energy.
