If the crema is in a plastic container, it's inferior. You want the stuff that comes in plastic bags.


Flavor notes: Among the four, Salvadoran was rich, salt level just right, and a little sweet (my fave if you must know); Mexican was saltiest; Honduran was salty and a little more acidic, perhaps with barely a hint of cheesiness; and Guatemalan was less tart/tangy than the others. In general, the Central American versions were a bit nuttier and richer than their Mexican counterparts.

Good info, thanks. I've seen the different kinds at the Latin markets here. That's helpful.
 
Are those Mexican meatballs? I think I'm going to do some pork ribs too. My wife wants me to get them out of the freezer.
We're doing pork/kraut for new years day so don't want to OD on pork the next 2 days. Did chicken/dumplins tonight. Not sure about tomorrow but Saturday we're doing ham/cheese sliders, chicken wings, and some sides we haven't figured out yet.

This is close. I use mint in mine at the end, and up the veggies a bit.

Margaritas are simple. 1/2 cup good tequila, 1/4 cup contreau, 1/4 cup fresh squeezed lime juice, agave nector to taste, shake with ice.
