I committed to making cornbread to go with a brisket chili cook off at the office.

I've messed around a bit with jiffy and alternative cook methods, specifically, I like to cook bacon in the cast iron pan then use that instead of butter then crumble the crispy bacon in and top with some of the bacon.

I've not really messed around with the ingredients other than that, but see many saying to add sour cream or buttermilk instead.

I know someone here has a good recipe I should try. I'm not committed to Jiffy either, it's just always been easy since I've no better recipe.

What a man po to do?
 
My mom makes the best cornbread on the planet. Unfortunately, she doesn't use a recipe so I can't help you; or even myself, to recreate it. She's always like "just watch me do it".

I do know she uses half n half or heavy cream in lieu of milk, bakes it in a cast iron skillet and uses all organic butter.

Thanks, I was strongly considering heavy cream instead of milk or buttermilk. This kind of seals that decision.
 
I have tried COUNTLESS variations of from scratch cornbread, and I never come out with something better than a Jiffy cornbread mix to start. I like to use the Jiffy mix, use about 1/4 cup bacon fat and 1/4 cup sour cream, and a small can of green chillis. Super moist and flavorful and the chillis give it a little kick and add color. I've also put red bell peppers and corn in it to give it more texture, but I think the red peppers make it a little sweeter than I like.

I tots agree! However, the women in my clan complain the jalapenos are too spicy so I usually use green chillis

Not if they are from a jar.

I had thought about that, but my concern is I've no idea how spicy the chili's will be. Could wind up with hot on hot and I'd rather make a honey butter and let em decide. Might consider some red pepper or cayenne for a bit of background heat to surprise em and they can add as desired.

If I can find some fresh Fresno peppers, I might experiment as those are superior imo.

I think I'll stick with the Jiffy then. No sense trying something else when you got a great base there.
