Musical Cornbread (2 Viewers)

Jiffy is not real cornbread unless you’re from outside of the south! Go get you some Martha White corn meal or corn flour and follow directions. It’s real simple.

Try using “tamed jalapeños”… they’re not very hot as opposed to fresh.

You can get tricky with the bacon, jalapeños, cheese and maybe corn as well.

When you graduate from regular cornbread, we’ll start talking about fried cornbread!😜

How about regular cornbread....not sweet Jiffy.
  • 2/3 cups - oil or bacon grease
  • 2 eggs
  • 2-1/2 cups - milk or cream
  • 2 cups corn meal
  • 2 cups - flour
  • 2 tbs - baking powder
  • 2 tsp - baking soda
  • 1 tsp - salt
Pre heat oven and greased cast iron pan to 475. Put oil in bowl; add eggs and beat until foamy. Add milk and sift in dry ingredients. put in pan and bake 20 minutes or until golden brown.

This came directly from RIVER ROAD RECIPES and it is the only way to make cornbread

Recipe is on the Martha White bag. You could get the self rising kind so you can skip the leavening agents. Please skip the jiffy, it’s sweet like a cake.
Go ahead with your bacon. I like buttermilk but if you use milk use whole milk.

My wife likes Jiffy as well. I was raised on regular cornbread and hoe cakes so that’s why I learn towards that way. My dad always made the cornbread but passed away a few years ago. There are variations but you make it the way you enjoy it.
 
I don't like sweet cornbread usually. My grandpa was a cornbread making machine. He had several different types. Cracklin was my favorite followed by Mexican which just had jalapenos and whole kernel corn in it. Cornbread is cheap to make so if I were you I'd just start knocking out some test pans and find something you like. Being it's a brisket cook-off I'd work with that theme.

I specifically use Jiffy to make sweet cornbread. I add some cinnamon to the mix and top it with some brown sugar and make a honey butter for it. It's pretty damn good.
