Eating Raoul: "Yes, it's amazing what she can do with a cheap cut of meat."

A Mighty Wind: When they show the "solo records" of Mitch. I literally fell out of my chair laughing.
Waiting for Guffman: "Nothing ever happens on Mars."

Coen Bros. movies:
O Brother, Where Art Thou? (too many to mention really): "Do not seek the treasure!"

Dramatic movies:

Bridge Over the River Kwai:
The final scene, as the camera follows the Eagle. "Madness...madness."

Lawrence of Arabia (greatest film ever made):
Lawrnece: "May we claim to ride in your name, sire?"
Feisal: "Yes, you may claim it,but...in whose name do you ride?"
another one:
Feisel: "Yes, but 'Aurence is a two-edged sword. I am sure we are equally glad to be rid of him."
Allenby: "My G-d...I thought I was a hard man, sir."
Feisel: "You are merely a general, while I must be a king."

Blade Runner: "It's too bad she won't live...but then again, who does?"

Schindler's List: At the end, where he collapses and starts crying about the things he's wearing that he might have saved one more. One of the most moving scenes ever filmed.

Clockwork Orange: Where they're forcing him to watch the brainwashing films and he freaks out that they're using Beethoven's 5th because he knows he'll never be able to hear it again.

Apocalypse Now: "I love the smell of Napalm in the morning. Smells like...victory."
and, of course, the scene preceding the line with "Ride of the Valkyries" during the strike.

The Man Who Would Be King: Near the end, when they march Sean Connery onto the bridge and he and Danny (Michael Caine) begin singing until the bridge falls.

I could go on all day!
 
The door gunner scene from "Full Metal Jacket." I won't type it here because it's kind of long, but if you've seen it, you know what I mean.

Also, the scene from 2001: A Space Odyssey when Dr. Floyd is flying to the space station.
