Yeah, there a literal body farm in Tennessee where they study decomposition of bodies in various conditions to get a better determination on time of death. They put them fully buried, half, just covered in brush, in trunks of cars, etc in order to see what goes on. Insect activity is a big part of it.
I think blood coagulation is another indicator.
 
Actually, they can make a pretty good estimate of how long someone has been dead based on decomposition and insect activity.

That a place like that exists is fascinating. It sound morbid but forensics kinda is.

No, they won't be able to get it down to the moment. But they should be able to get it down to the day, or at the very least a 48 hour window.
 
I think in that case, he would have alerted authorities to start a search. The only viable reason to leave there without her, is you don't want to be there when they find her.
Yeah, if it was an accident, from the first minute when he doesn't go to authorities and say, OMG, my girlfriend needs help, starts his guilt. I may not know what to do right away in the middle of nowhere, but I wouldn't just shrug my shoulders, get in the car and drive out of state.

Yeah, there's no single indicator, and external factors can vary (heat and cold obviously would affect the decomposition rate, but even time of year in regard to insect activity), so they look at a number of different things and then use the overall data to make an approximation.

Well, now I'm doing this deep dive. Apparently there's also a body farm in Texas. This article says 24 to 48 hours. Looking for something more recent than 2015, but I still think hours is a stretch. I'm guessing that the return to the site where her body was found the next day was also to gather up these very important soil samples for the presence of these microbes.

Yeh, that's what I'm reading. The longer the body is exposed to the elements, the larger the window is.
