Most likely fried clams with fries or other side.

They had fried liver at the buffet at the Popeyes on Pinhook in Lafayette many moons ago. That buffet was the sheet back then.

I'd rather them take them off the menu than switch to frozen. All of my favorite lunch spots killed onion rings after covid. Apparently they are too labor intensive and consume too much fryer space to be economical.
