Explain the slices of fresh ginger. Does this mean ginger root? How big? Peeled?
Yes ginger root, a thickish thumb size piece

I peel it, don’t know if you have to

I do slices about a quarter inch thick

I steep it for at least 30 minutes, recipe doesn’t say but I strain the syrup

When we buy retail this us what we get

Local winery dont know how widespread it is but it is pretty good

Last weekend we ripped through a double batch in a few hours

There’s a triple batch on the stove now
 
Made this over the weekend

Very good

When we have wine leftover we store it in a bottle in the fridge then reheat it on the stove

Did feel like taking the time to heat it so I had some of our normal recipe cold, it was very good, a different dimension than hot
 
Made this for the game, we really liked it, this will be in the seasonal rotation

I did end up adding more honey and brown sugar to it

Also added more star anise and cloves

I put everything in the slow cooker for an hour instead of stovetop

INGREDIENTS​

  • 6 ½ cups dark beer (I used Modelo Black)
  • 2 ½ cups cherry juice
  • 3 tablespoons honey
  • 1 star anise
  • 2 cloves
  • 2 tbsp. lemon juice
  • 1 tbsp. vanilla extract
  • 1 cinnamon stick

INSTRUCTIONS​

  • In a large pot, combine all the ingredients and cook for about 20 minutes on medium-high heat. Make sure not to bring the mixture to a boil.
  • Make a taste test. Add more honey or brown sugar if you like it sweeter, or more lemon juice if you like it tarter.
  • Strain the spices
